Baked Beef & Mushroom Meatballs

Ingredients

  • Baked Beef & Mushroom Meatballs:
  • 20ml olive oil, extra virgin
  • 500g mined beef
  • 1 egg
  • 3g dried oregano or Italian mixed herbs
  • 100g mushroom, finely chopped
  • 6g minced garlic
  • Pinch of black pepper
  • 500g tomato passata
  • Extra ingredients:
  • 125g fettuccine pasta (1 serve)

Directions

  1. Prepare baked beef & mushroom meatballs according to recipe instructions below.
  2. Preheat oven to 160C. Drizzle oil in a large baking dish.
  3. To make the meatballs, in a large bowl, combine mince, egg, oregano, mushrooms, garlic and pepper. Using damp hands, gently roll into meatballs about 1 heaped tablespoon each. Place into the baking dish. Pour over passata and bake in the oven for 30 to 40 minutes, or until meatballs are cooked through.
  4. Top with parmesan or mozzarella cheese before placing in oven to bake.
  5. Divide meatballs between four serving plates.
  6. When meatballs are nearly ready, cook pasta according to packet instructions.
  7. Serve pasta topped with one serving of the baked beef & mushroom meatballs for dinner.
