Baked fish

Ingredients

  • Ingredients:
  • Fish (Salmon/cod, or any desired fish), deboned
  • 1 – 2 inch piece of fresh ginger, peeled and grated (feel free to add more if desired)
  • ½ bunch parsley, chopped
  • Lemon juice
  • Coconut oil
  • Lime zest from one lime, grated
  • 1 can coconut milk, with cream
  • Salt
  • Coconut meat (optional)
  • 1. Preheat oven to 350°F.
  • 2. Oil a baking dish with coconut oil.
  • 3. Combine all ingredients except for fish.
  • 4. Place fish in prepared baking dish and top with the herb mixture.
  • 5. Place in the oven and cook for 1 hour to 1 ½ hours, or until tender.
