Slice zucchini, lay on paper towels, sprinkle both sides with salt. Cover with more towels and press down and leave them about 20 mins to absorb moisture.
Preheat oven to 400*. Place parchment paper on baking sheet. Get 3 bowls. First bowl combine crumbs,cheese, oregano and some salt and pepper. Bowl 2 place flour with more salt and pepper. Third bowl beaten eggs with more s & p.
Dredge zucchini in flour, eggs then crumb mixture pressing to coat. Place on sheet. Bake 20-30 mins or til golden and crispy. Serve with dip.
