Balsamic Chicken Strawberry Basil Relish

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 tsp oregano
  • 1/2 tablespoon honey
  • 1 garlic clove, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

  • 225 grams fresh strawberries, diced
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon balsamic vinegar
  • 0.5 teaspoon honey (optional)
  • Or 1 T balsamic glaze
  • Pinch of salt

Directions

  1. In a medium bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and freshly ground pepper until thoroughly combined.
  2. Place chicken breasts in a shallow dish and pour marinade over them. Ensure each breast is evenly coated, then cover and refrigerate for at least 20 minutes, up to 2 hours.
  3. Gently combine diced strawberries, finely chopped red onion, chopped basil, balsamic vinegar, honey if using, and a pinch of salt in a small bowl. Stir lightly and refrigerate until ready to use.
  4. Heat a grill or skillet over medium-high heat. Remove chicken breasts from marinade and cook for 5 to 7 minutes per side, ensuring a deep sear and that the interior is fully cooked.
  5. Transfer cooked chicken to a plate and rest for 5 minutes. Slice chicken across the grain into portions.
  6. Plate sliced chicken and top each piece generously with the strawberry basil relish. Serve immediately
