  • 1 1/2 tsp kosher salt
  • 2 cloves garlic grated
  • 1 piece ginger 1-inch; grated; fresh; about 2 teaspoons
  • 2 lb chicken thighs . boneless; skinless
  • Vegetable oil for the grill
  • rice for serving; cooked
  • Cilantro and sliced Fresno for serving; or jalapeño peppers
