Banana Nut Pancakes

Ingredients

  • 1 1/2 cups whole wheat white flour
  • 1/2 cup oatmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cup buttermilk
  • 2 bananas, mashed
  • 2 eggs
  • 3 tablespoons olive oil
  • 1/2 cup chopped walnuts

Directions

  1. Combine dry ingredients in a large bowl, and wet ingredients in a medium bowl. Add wet ingredients to dry ingredients and mix together. Fold in nuts.
  2. Heat skillet over medium heat. Add a bit of butter then drop a scant cup of batter into pan for each pancake. Cook 2-3 minutes then turn and continue cooking for about 2 minutes more.
