Add all tomato products, 2 cups of coffee, molasses, and all spices to the slow cooker and turn on high.
Dice the onion and pepper and toss in.
Remove all chipotle peppers from the can and dump the adobo sauce into the slow cooker. Open 2-3 chipotle peppers and remove the seeds. Finely chop and add to the slow cooker. Note: You may leave the seeds in a pepper and/or add more depending on you preference. 2 peppers with no seeds will produce a mild spice level.
Let cook for 4 hours.
Strain and rinse beans and corn and toss in the cooker. Add 2 more cups of coffee.
Let cook for 4 hours. Cut up the whole tomatoes if desired.
