Beef And Pork Ragu

Ingredients

  • Oil - enough to coat bottom of saucepan
  • Butter - thick slice
  • 1 brown onion, finely chopped
  • 1 piece of celery, finely chopped
  • 1 carrot, finely chopped
  • 4 cloves garlic, finely chopped
  • Lots of cracked pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp nut meg
  • (OR 1 tsp all spice)
  • 1 tsp (each) chopped rosemary and sage leaves
  • Beef and pork mince (800g-1kg total)
  • 2 tbsp tomato paste
  • 1-2 cups of water
  • 2 x 400g tin whole peeled tomatoes
  • Beef or chicken stock cube
  • 1 cup red wine
  • 1 tsp sugar (if needed; depends on tinned tomatoes used)
  • Pinch of salt
  • Chilli flakes or fresh chilli (optional)

Directions

  1. Gently cook onion/carrot/celery/garlic in butter and oil on low heat until golden/light in colour approx 15 mins. Then add spices, herbs and pepper, cook another 2 mins. Turn heat to high, then add meat to brown with herbs, approx 10 mins.
  2. Then add rest of ingredients.
  3. Cook on low heat for at least 2 hours.
