Beef Mince Ramen with Veggies

Ingredients

  • 500g beef mince
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 3 tbsp tamari (or soy sauce)
  • 2 tbsp hoisin sauce
  • ½ cup water (or beef stock for more depth)
  • 2 blocks ramen noodles
  • 1 head bok choy, chopped into bite-size pieces
  • 1 large carrot, thinly sliced in half
  • 1 zucchini, halved lengthways and sliced
  • 1 small handful snow peas
  • 3 spring onions, sliced (whites for cooking, greens for garnish)

Directions

  1. 1. Cook veggies in oil: Carrots 4 mins, Zucchini 2–3 mins, Snow peas & bok choy stem→ 1–2 mins, leaves Bok choy → one minute, just until wilted. Put veggies in bowl
  2. 2. Add oil to wok. Add garlic and spring onion whites- cook for 1 minute.
  3. 3. Add mince and brown.
  4. 4. Cook noodles 4 mins
  5. 5. Add sauce (tamari, hoisin and beef stock)
  6. 6. Add veggies back in mince with noodles, stir through and serve.
