1. Cook veggies in oil: Carrots 4 mins, Zucchini 2–3 mins, Snow peas & bok choy stem→ 1–2 mins, leaves Bok choy → one minute, just until wilted. Put veggies in bowl
2. Add oil to wok. Add garlic and spring onion whites- cook for 1 minute.
3. Add mince and brown.
4. Cook noodles 4 mins
5. Add sauce (tamari, hoisin and beef stock)
6. Add veggies back in mince with noodles, stir through and serve.
