Ingredients

  • 1 tsp salt
  • 1 tsp ground coriander
  • 1/4 tsp ground turmeric
  • 2.5 centimeters ginger, chopped
  • 4 cloves garlic, chopped
  • 4 large shallots chopped
  • 1 Tbsp chili pepper flakes
  • 2 Tbsp vegetable oil
  • 2lbs beef cut into large cubes
  • 2 stalks lemongrass white part, smashed
  • 4 kaffir lime leaves
  • 2.5 centimeters galangal sliced
  • 2 cups coconut milk
  • 1 Tbsp Palm sugar (substitute brown sugar)
