Berry Coconut Panna Cotta

Ingredients

  • 1 can (13.5 ounce) full-fat coconut milk
  • 3 tbsp honey or maple syrup (divided)
  • 1 tsp vanilla extract
  • 2 tsp Vital Proteins Gelatin
  • 1 tbsp water
  • coconut oil, to grease
  • Berry Topping
  • 1 cup of mixed berries
  • 1 tbsp honey or maple syrup
  • 1-2 tbsp Chambord Liqueur (optional)
  • Topping variation:
  • Pomegranate Jelly
  • ¼ cup hot water
  • 1.5 tsp gelatin
  • ½ cup pomegranate juice
  • Pomegranate arils to sprinkle on top
