Big Batch Gnocci Dough

Ingredients

  • 10 pounds potatoes, cooked and peeled
  • 6 eggs
  • 3 Tbsp. salt
  • 5 cups flour
  • ……OR for a smaller batch
  • 2 1/2 lbs. (4 cups) cooked potatoes
  • 2 eggs
  • 3/4 Tbsp salt
  • 1 1/2 cups flour, or more if needed

Directions

  1. Peel potatoes and boil until tender
  2. Mash peeled potatoes with eggs and salt
  3. Gradually mix in flour
  4. Divide into serving sized portions to freeze and prepare later
  5. DOUGH SHAPING
  6. Roll about a cup of fresh or thawed dough on a floured board to make a length of dough a half inch thick.
  7. Cut into one inch pieces, and pinch the ends down to make tiny pillows
  8. Place in boiling water to cook
  9. When they float to the top, remove with a slotted spoon.
  10. Place on serving plate and top with your favorite pasta sauce.
