#Black Eyed Peas

Ingredients

  • 1 lbs black eyed peas soaked for at least 2 hours
  • 1 leak white and light green only diced
  • 1/2 large onion diced
  • 1 large or 2 small carrots diced
  • Hot Peppers if you want it spicy
  • 1/2 fennel bulb
  • 2 sprigs thyme tied together
  • 1 Tbsp Tomato paste
  • 1/2 cup white wine
  • 1 lbs protein (hot Italian sausage, mild Italian sausage, beef, ham, Pork, veal)
  • 2 to 3 Tbsp Olive oil
  • 1 15 oz can diced or crushed tomatoes
  • 3 cups Chicken stock (cover peas)
  • 1 tsp Salt
  • 1/2 tsp black Pepper

Directions

  1. Soak peas in water for at least 2 hours or overnight
  2. Add oil to dutch oven over medium heat
  3. Cook protein and remove for later
  4. Add the aromatics and cook till just tender
  5. Add tomato paste and cook for a minute
  6. Deglaze with the wine and reduce till almost dry
  7. Add the peas, stock, tomatoes, salt and pepper
  8. Add protein back
  9. Bring to boil and reduce to simmer
  10. Cook till peas are done.
  11. Check for salt
  12. Turn off heat and let sit for 15 minutes
  13. Garnish with fresh chopped cilantro
