Blueberry Cottage Cheese Breakfast Bake

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup fresh blueberries
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. Preheat your oven to 350°F (175°C). Grease a small baking dish.
  2. In a bowl, whisk together the cottage cheese, eggs, honey, cinnamon, vanilla, and salt.
  3. Stir in the oats and gently fold in the blueberries.
  4. Pour the mixture into the prepared dish and spread evenly.
  5. Bake for 25-30 minutes until golden and set.
