Blueberry Muffins

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 (6oz.) lemon yogurt
  • 1/4 tsp. lemon juice
  • 1/2 cup plus 2 Tbsp. apple sauce
  • 2 egg whites
  • 2 cup fresh blueberries

Directions

  1. Mix together flour, sugar, baking powder and baking soda in a bowl; Set aside.
  2. Combine lemon yogurt, lemon juice, apple sauce and egg whites. Mix together and add to flour mixture.
  3. Add blueberries. Scoop into greased muffin tins.
  4. Bake at 400 for 25 minutes.
