Bok Choy Chicken Stir Fry

Ingredients

  • Oil (for sauté - not sesame)
  • Garlic
  • Ginger
  • Green onion
  • Chicken chopped ~1lb
  • Soy sauce
  • Sesame oil
  • Veggies julienne sliced ~2 cups (the more variety the better...brocoli, bell pepper, carrot, etc.)
  • Topping: crushed red pepper or chili garlic sauce

Directions

  1. Heat oil in pot or large frying pan over medium to medium high heat.
  2. Add garlic, ginger and green onions. Let cook for one minute.
  3. Add chicken. Stir frequently so as to not burn. Cool through.
  4. Add soy sauce to cover all.
  5. Add enough sesame oil to veggies to lightly cover (it’s very strong). Then add veggies to pot.
  6. Make sure there is enough garlic, ginger and green onion for all the veggies too. I added more here. Add salt if desired.
  7. Stir frequently, though there should be enough liquid that You should be able to leave it for a few minutes at a time without it sticking. Cook until veggies are soft but still have a nice crunch.
  8. Serve over warm white rice. We used jasmine rice. Add crushed red pepper or chili garlic sauce if desired. The dish is good without the spice though :)
