Ingredients

  • 2 lbs. breakfast sausage
  • 1 bag frozen hash browns
  • Red pepper flakes
  • 1 can green chilies
  • 12 eggs
  • 1 cup heavy cream
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 8 oz. shredded cheese, plus more for topping

Directions

  1. Brown sausage and season with red pepper flakes.
  2. Whisk eggs, cream, dry mustard, salt, pepper, and green chilies. Add cheese, hash browns, and sausage. Fold everything together.
  3. Bake covered at 350 degrees for 50 minutes. Remove foil, sprinkle top with cheese and bake another 20 minutes at 400 degrees.
