Breakfast Casserole

Ingredients

  • 3 whole eggs
  • 368g egg whites
  • 114g (1 cup) Jimmy dean fully cooked turkey
  • 244g diced sweet potatoes
  • 82g mixed diced yellow, red and orange bell pepper
  • 1/4 cup baby spinach salt and pepper to taste

Directions

  1. 1. Preheat oven to 375 degrees. Spray a 9 × 9 inch baking dish with non-spick cooking spray.
  2. 2. In a medium size bowl, whisk together whole eggs and eggs whites
  3. Set aside.
  4. 3. Line bottom on baking dish with sweet potatoes. Then layer the bell peppers, turkey and spinach. Pour the eggs over the top of the spinach.
  5. 4. Bake for 45-50 minutes or until the edges of the egg begin to brown and the casserole is firm throughout. Makes 4 servings.
