Bulgogi Philly Cheesesteak

Ingredients

  • 2 pounds sirloin, very thinly sliced across the grain (see note)*
  • 3 cloves garlic, minced
  • ½ yellow onion, diced
  • 3 scallions, sliced
  • ½ cup low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 3 tablespoons dark brown sugar
  • freshly ground black pepper
  • 1 tablespoon gochujang
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 medium yellow onions, halved and sliced ⅛-inch thick
  • 1 tablespoon balsamic vinegar
  • kosher salt
  • 12 ounces provolone cheese, grated
  • 4 good quality hoagie rolls, split (don’t cut all the way through, you want it to open like a book)
  • crushed red pepper, for garnish (optional)
