Burger Bowl With Fries

Ingredients

  • fries:
  • 2 large Russet Potatoes **peeled and sliced into fry shapes about 1/2” thick
  • 1 tablespoon avocado oil or olive oil
  • 1/2 teaspoon sea salt ***
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon nutritional yeast optional (for flavor)
  • special sauce:
  • 1/3 cup paleo mayo homemade or purchased
  • 1 tablespoon dijon mustard
  • 3 tablespoons ketchup
  • 1 tablespoon dill pick relish or chopped dill pickles
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • bowls:
  • 6 slices paleo friendly bacon no sugar added for Whole30
  • 1 lb ground beef I used 80% lean grass fed beef
  • 1/2 teaspoon sea salt or to taste
  • Large pinch black pepper or to taste
  • 1/2 teaspoon garlic powder
  • 4 cups greens of choice I used hearts of romaine
  • 1 cup cherry tomatoes halved or sliced
  • 1 medium purple onion thinly sliced
  • Sliced dill pickles no sugar added for Whole30, add as many as you like
  • 1 large avocado or two small ones

Directions

  1. Preheat your oven to 425°F and line 2 baking sheets with parchment paper.
  2. Toss the sliced potatoes in the oil and sprinkle all over with the seasonings.
  3. Spread out on the baking sheet so that no two fries touch, this will helps them roast very crispy.
  4. Roast them in the preheated oven for 30 minutes or until golden brown and crisp.*
  5. To cook the bacon in the oven too, lay it out on the second baking sheet and bake it for 16-20 minutes in the preheated oven, or until it’s cooked to preference.*
  6. You can do this in the same oven with the fries on a different rack.
  7. If you prefer, you can pan fry the bacon in a large skillet until crisp.
  8. While the fries and bacon bake, make the special sauce.
  9. Whisk all ingredients together in a small bowl until well combined and set aside.
  10. Heat a large skillet over medium high heat and drizzle a little bit of oil in the skillet.
  11. Once hot, add the beef and sprinkle with salt, pepper and garlic powder.
  12. Cook for about 2-3 minutes, stirring and breaking up lumps until browned.
  13. This recipe will make 4-6 burger bowls.
  14. To assemble the bowls divide the greens between the bowls and top with tomatoes, onions, pickles, the beef, cooked bacon and hot fries.
  15. Lastly, slice the avocado and divide between the bowls and serve drizzled with the special sauce, or leave it on the side for dipping.
  16. Enjoy!
