Butternut Squash Bisque

Ingredients

  • 1.5 lb peeled, seeded diced butternut squash
  • 1.5 white onions, diced
  • 2 large peeled carrots, diced
  • 1 garlic clove, chopped
  • 1.5l chicken stock
  • 3 oranges, juiced, zested
  • 1.5 sticks cinnamon
  • 3 cloves
  • 1 star anise

Directions

  1. Place squash, onions, carrots in pot with stock, add juice and zest and water if needed to cover veg. Add spices in a cheesecloth and add to soup. Simmer till vegetables are done about 30 min. Remove spice bag and purée after cooking. Add salt/pepper as needed
