BUTTERNUT SQUASH GRATIN

Ingredients

  • 3 lb. butternut squash, peeled, seeds removed, flesh cut into chunks
  • 1 onion, finely ' chopped (about 1 cup)
  • 3 cloves garlic, minced •1/2 tsp. ground nutmeg
  • 2 Tbsp. chopped fresh sage
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 cup heavy cream
  • 3 Tbsp. unsalted butter, It into small pieces

Directions

  1. Preheat overrto-400°-E\ I Grease -by-13-inch baking
  2. Shred squash in a large bowl, toss in onion, garlic, nutmeg, sage,salt and pepper.
  3. Spread squash mixture evenly in baking dish. Pour cream over top and dot with butter.
  4. Cover with foil and bake until tender, about 40 minutes.
