Combine the bread flour, yeast, salt, and sugar in the bowl of a stand mixer. While the mixer is running add the water and olive oil and beat until the dough forms into a ball. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
Add the dough to a large, lightly oiled bowl and cover with plastic wrap. Let it rest and rise in a warm area for at least 1 hour. Meanwhile, preheat oven (including pan) to 400 degrees. Turn the dough out onto a lightly floured surface and divide it into 4 equal pieces. Transfer each to parchment, and roll onto circles about 1/4 inch thick.
Add desired fillings to half of the circle, leaving 1/2 inch boarder around. Brush the edge with water and fold dough over the top of the filling. Pinch the dough together to seal. Transfer parchment and calzone to pan. Brush top with beaten eff. Bake until golden brown 20-25 minutes.
