Caramel Pecan Slice

Ingredients

  • Base -
  • 60g melted butter
  • 1/4c caster sugar
  • 1/2c SR flour
  • 1/2c coconut
  • Topping -
  • 2 eggs, beaten
  • 1/2t vanilla
  • 1c coconut
  • 1c pecans, roughly chopped
  • 1c brown sugar
  • 1/2t bi-carb soda

Directions

  1. Oven 180°C.
  2. Base - Mix ingredients and press into small slice tin.
  3. Bake for 15min.
  4. Topping - mix all dry ingredients and then add eggs.
  5. Spread mixture over the partly cooked base and bake for further20-25 min or until the topping is cooked.
  6. Cool in tin before cutting into squares.
