Cassava and Tigernut Flour Pancakes/Waffles

Ingredients

  • 1⁄2 cup Tigernut flour
  • 1 1⁄2 cups Cassava flour
  • 1⁄2 tsp baking soda
  • 1 tsp baking powder
  • 1 1⁄2 cups full-fat coconut milk
  • 1 banana, very ripe
  • 2/3 cup palm oil shortening or coconut oil
  • 1 scoop Gelatin
  • 1 tsp pure vanilla extract
  • 1/2 tsp sea salt
  • Filtered water, as needed to thin
  • Stevia to taste (optional)

Directions

  1. Step One: In a medium bowl, mix together the
  2. flours, baking powder, baking soda, gelatin and
  3. sea salt.
  4. Step Two: To a separate medium bowl, add the
  5. coconut milk, palm oil or coconut oil, banana,
  6. vanilla, and stevia if using, and mix well.
  7. Step Three: Pour the wet ingredients into the dry
  8. and mix well until smooth. If mixture appear
  9. to be too dry, add water until it forms the
  10. consistency of a thick pancake batter. Allow
  11. mixture to rest for about 20 minutes to give the
  12. gelatin time to bloom.
  13. Step Four: To make pancakes, preheat a large
  14. skillet over medium heat with 1 tablespoon
  15. coconut oil. Once pan is preheated, add 1⁄4 cup
  16. portions of the batter to the pan and allow to cook
  17. on each side until golden brown. To make waffles,
  18. preheat a waffle iron and grease with coconut oil,
  19. then scoop 1⁄2 cup portion of the batter into the iron
  20. and cook until browned. Once cooked, top your
  21. pancakes or waffles with unsweetened jam
  22. if desired
