Chai Masala

Ingredients

  • 1 1/2 tablespoons whole black peppercorns
  • 1 1/2 teaspoons fennel seeds
  • 2 tablespoons whole cloves
  • 2 tablespoons green cardamom pods
  • 1 1/2 teaspoons turmeric
  • 1 1/2 teaspoons cinnamon, preferably Vietnamese
  • 1 tablespoon powdered ginger
  • 1/2 teaspoon freshly grated nutmeg

Directions

  1. Heat a small sauté pan and then toast the peppercorns, fennel seeds, cloves, and cardamom until fragrant, about 3 minutes.
  2. Transfer to a coffee bean grinder and pulse into a powder.
  3. Place in a small bowl and whisk in the turmeric, cinnamon, ginger, and nutmeg.
  4. When completely cool, funnel into an airtight glass jar.
  5. Makes 1/2 cup.
