Ingredients

  • 125g brown rice, heat & serve quick cup
  • 50g cheddar cheese, shredded
  • 75g sweetcorn, drained (125g not drained)
  • 131g coleslaw salad mix
  • 15g salad dressing

Directions

  1. Prepare the brown rice cup according to the packet instructions.
  2. In a serving bowl, combine the rice, cheese, corn and mixed vegetables and coleslaw mix.
  3. Drizzle over the salad dressing and toss to combine.
  4. TIP: feel free to choose your favourite salad kit with dressing from your local supermarket. Be sure to measure out the dressing so you stick to your food unit targets.
