Cherry Snack Cakes

Ingredients

  • 1 1/2 cup butter
  • 1 1/2 cup sugar
  • 4 eggs
  • 2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup milk
  • 1 tsp. vanilla
  • 1 10 oz. jar maraschino cherries, drained and finely chopped, reserve juice
  • Cherry Frosting:
  • 2 cup powdered sugar
  • 1/4 cup butter
  • 1/2 tsp. vanilla
  • 9 maraschino cherries
  • 1/8 cup reserved maraschino cherry juice + 2 tbsp.

Directions

  1. Preheat oven to 350.
  2. Cream butter and sugar together until light and fluffy. Add eggs and vanilla. Combine flour, baking powder, and salt. Gradually add dry ingredients and milk.
  3. Spray PERFECT BROWNIE pan and divider thoroughly with nonstick cooking spray. Spread batter into PERFECT BROWNIE pan. Place divider insert into pan.
  4. Bake at 350 for 35-40 min.
  5. Whip butter, sugar, and 1/4 cup reserved cherry syrup. Add more cherry syrup, as needed, until icing is creamy and thick enough to spread.
  6. Remove divider and spread icing on cooled cakes.
  7. Top each cake with one maraschino cherry.
