Chicken And Mushroom Soup

Ingredients

  • 1 tablespoon olive oil
  • 8 oz chunks chicken
  • Salt and pepper
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 8 oz mushrooms
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, diced
  • 1/4 cup flour
  • 4 cups chicken broth
  • 3/4 cup milk
  • 1/4 cup heavy cream
  • 2 tablespoons parsley
  • 1/2 teaspoon rosemary

Directions

  1. Heat oil in a large pot over medium heat. Add chicken chunks and cook until golden, about 2-3 minutes. Set chicken aside.
  2. Melt butter in pot. Add garlic, mushrooms, onion, carrots, and celery. Cook, stirring occasionally, until tender, about 4 minutes.
  3. Whisk in flour until lightly browned. Whisk in chicken broth, chicken and cook, whisking constantly about 4 minutes.
  4. Stir in milk and heavy cream until heated through, 1/2 minutes.
  5. Garnish with parsley and rosemary.
