Chicken And Mushrooms Over Asparagus

Ingredients

  • Bunch asparagus
  • 2 chicken breasts filet
  • 4 garlic cloves minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 shallot minced
  • 1 container mushrooms sliced
  • 4 tbsp butter
  • 2 tbsp Dijon mustard
  • 1 tsp thyme
  • Salt and pepper to taste

Directions

  1. Steam asparagus
  2. Season chicken with salt and pepper
  3. Add 2 tbsp butter to pan
  4. Add chicken and cook 3-4 min per side, transfer to plate when done
  5. Add 2 tbsp butter to pan with mushrooms and shallots. Stir and cook until tender and liquid evaporates
  6. Add minced garlic and thyme. Cook 1 min
  7. Add broth, cream, Dijon mustard, and salt and pepper
  8. Rerun chicken and simmer until sauce is thick, about 4-5 min
  9. Put over asparagus
