Chicken BLT Pasta Salad

Ingredients

  • Pasta Salad:
  • - 12 ounces uncooked rotini pasta
  • - 1 pound cooked, diced chicken
  • - 6 slices Hormel Fully Cooked Original Bacon, reheated and diced
  • - 1 cup chopped iceberg lettuce
  • Dressing:
  • - 3/4 cup nonfat plain Greek yogurt
  • - 1/4 cup light mayonnaise
  • - 2 Tablespoons lemon juice
  • - 1 teaspoon dried chives
  • - 1 teaspoon dried parsley
  • - 3/4 teaspoon dried dill
  • - 3/4 teaspoon garlic powder
  • - 1/4 teaspoon onion powder
  • - 1/2 teaspoon salt
  • - 1/4 teaspoon black pepper
  • - 2 Tablespoons Ray's No Sugar Added Barbecue Sauce

Directions

  1. Cook pasta according to package instruction.
  2. Rinse the pasta in cold water then drain and place in a large mixing bowl.
  3. Add cooked chicken, bacon, tomatoes and lettuce to the bowl and mix to combine.
  4. In a separate bowl, whisk together all dressing ingredients then pour on top of the pasta salad.
  5. Stir until well combined.
  6. Cover and store in the refrigerator before serving.
