  • 3 medium ripe tomatoes , diced (or 2 cups cherry tomatoes, halved)
  • 1/4 cup fresh basil , chopped
  • 2 cloves garlic , minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper , to taste
  • For the Chicken:
  • 1 lb boneless, skinless chicken breasts (or thighs), sliced into strips
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper , to taste
  • For the Pasta:
  • 8 oz pasta (penne, fusilli, or spaghetti work well)
  • Optional: Grated Parmesan cheese , for serving
