CHICKEN MADRAS

Ingredients

  • 4 boneless, skinless chicken breasts, cut into small cubes
  • 1 pound ripe tomatoes, chopped
  • 2 large white onions, finely chopped
  • 3 cloves garlic, crushed
  • 2 red chilis, minced (with or without seeds)
  • 1 lime, juiced
  • 1 (1/2-inch) piece ginger, peeled and grated
  • 1 1/2-3 cups water, as needed
  • 3 tablespoons ghee or vegetable oil
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder, or to taste
  • 1 teaspoon garam masala (if you can find it at grocery store)
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • salt and pepper, to taste
