#Chinese Chicken Wings

Ingredients

  • 20 +/- chicken wings (drums and drumetts)
  • 2 Tbsp Cooking oil
  • 3 inch piece ginger peeled and sliced
  • 3-4 green onions cut to 2 inch pieces
  • 1/2 cup Sake or white wine or beer
  • 2 Tbsp mirin
  • 1 Tbsp sugar
  • 2 Tbsp light soy sauce
  • 1 Tbsp dark soy sauce
  • 2 Tbsp honey
  • 1 cup water
  • Salt

Directions

  1. Wash and dry chicken
  2. Salt both sides chicken and marinate for at least 30 minutes
  3. Heat oil in 12” high side pan on medium-medium high.
  4. Add a few sliced of the ginger and cook for a minute
  5. Brown chicken 5 minutes each side.
  6. Add the wine and reduce till alcohol is gone.
  7. Add the remaining ingredients, mix and bring to boil
  8. Cover and lower heat to med. cook for 10 minutes
  9. Remove the cover, ginger and green onions and cook to reduce sauce to thicken
  10. Serve with basil, sesame seeds, or more green onions
