Chocolate Lava Cake

Ingredients

  • 75g unsalted butter
  • 100g semi-sweet chocolate
  • 2 medium sized eggs
  • 50g granulated sugar
  • Pinch of salt
  • 30g all purpose flour
  • Extra softened unsalted butter and cocoa powder for ramekins

Directions

  1. Melt the chocolate and the butter together in a bain marie. Set aside to cool.
  2. Mix the eggs, sugar and pinch o salt together and whisk until pale.
  3. Mix the chocolate and egg mixture, then sift in the butter and mix until combined.
  4. Preheat the oven to 180C.
  5. Brush the ramekins with butter and sprinkle some cocoa powder to coat.
  6. Dill the ramekins and bake for 11-15 minutes.
