Chocolate Sheath Cake

Ingredients

  • Cake:
  • 2 cups flour
  • 2 cups sugar
  • ½ tsp. salt
  • 4 TBSP cocoa
  • 2 sticks margarine
  • 1 ½ cup Buttermilk (divided into 1 and ½ cups)
  • 2 eggs
  • 1 tsp. baking soda
  • 1 TBSP vanilla
  • Frosting:
  • 3 cups powdered sugar (sifted)
  • 4 TBSP cocoa
  • 1 stick margarine
  • 1 TBSP vanilla
  • 4 TBSP evaporated milk
  • 1 cup chopped pecans

Directions

Cake:

  1. Preheat oven to 350 degrees
  2. Mix flour and sugar in large bowl.
  3. In a saucepan, bring cocoa, 1 cup of buttermilk and margarine to a boil.
  4. Pour over flour and sugar mixture.
  5. Add eggs to the mixture and mix with a spoon (do not overmix)
  6. Stir in the remaining ½ cup buttermilk and baking soda to the mixture.
  7. Pour in an oiled and floured long cake pan and bake for 30 to 35 minutes. Cool 10 minutes before frosting.

Frosting:

  1. Boil margarine, cocoa and milk. Pour over powdered sugar and mix well. Add vanilla and pecans. If frosting is too thick add a little more milk. Spread on top of still warm cake. Enjoy!!
