Christmas Fruit Cookies
Ingredients
- 1 c light brown sugar
- 1c butter softened
- 3 eggs
- 3 c flour
- 1 tsp soda
- 1tsp lemon extract
- 1 tsp @ cinnamon and cloves
- 1/2 tsp nutmeg
- 12 oz gold raisins
- 2 c candied cherry/pinapple, cut in half with scissors
- 2 c chop pecans

Directions
- Cream butter with brown sugar. Add eggs. Add 2 1/2 c flour, soda, extract and spices. Mix well with hand mixer Mix 1/2 c remaining flour with fruit and pecans coating well . Fold fruit into batter.
- Use melon scoop, drop on parchment lined cookie sheets. Bake 300 degrees for 10 minutes. Cool. Freeze well
