Cinnamon-Sugar Rhubarb Cake

Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup sugar, divided
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 cups diced fresh or frozen rhubarb
  • 1 tsp cinnamon

Directions

  1. Cream shortening, brown, sugar, and 1/2 cup sugar until fluffy. Add the egg and vanilla and continue to beat with mixer.
  2. Mix the flour with the baking soda and salt. Add flour mixture alternately with the butter milk to the wet mixture. Beat until mixed. Stir in the rhubarb.
  3. Mix 1/2 cup sugar with cinnamon. Sprinkle over the cake.
  4. Bake at ____ degrees for ______ minutes.
