2. In a large mixing bowl, combine the ground beef, breadcrumbs, garlic, carrot, celery, eggs, ketchup, Worcestershire sauce, Dijon mustard, thyme, oregano, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
3. Transfer the meat mixture to a greased loaf pan, shaping it into a loaf shape.
4. Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the meatloaf is cooked through and the top is nicely browned.
5. Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before cutting let cool then cut and top with ketchup and serve
