Ingredients

  • 2kg chicken pieces
  • 5 x slices bacon (diced)
  • 6 x very small onions (sliced)
  • 6 x very small onions (quartered)
  • 400g mushrooms (chunks)
  • 2 cloves crushed garlic
  • 10 small potatoes (halved)
  • 1 & 1/2 cups red wine
  • 1 litre chicken stock
  • 1 & 1/2 teaspoons dried thyme
  • salt & pepper to taste

Directions

  1. Fry the chicken pieces in a large pan until well browned on all sides- remove chicken and set aside.
  2. Use the same pan to fry sliced onion and bacon, drain and set aside. Place quartered onions, mushrooms and garlic into the removable crockery bowl in slow cooker.
  3. Add the chicken, bacon, sliced onions, potatoes, wine, stock, thyme and salt and pepper. Cover with lid and cook on low for 6-8 hours or high for 3-4 hours or auto for 4-5 hours.
  4. Extremely flavoursome- very nice.
  5. Serves 6-8 normal people (although there wasn't much left after Maddy, Marshal and I attacked it!)
