Coriander Lamb Kebabs

Ingredients

  • 1 onion, chopped
  • 2 tsp minced garlic
  • 1 bunch coriander, roughly chopped
  • 2 tbsp lemon juice
  • 2 tbsp white wine
  • 1 tbsp olive oil
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 800g lamb fillets, cut into cubes

Directions

  1. If using bamboo skewers, soak in hot water for 30 minutes prior to use.
  2. Place all ingredients other than meat in a food processor and blend until well combined.
  3. Thread meat onto 8 skewers and place in a shallow dish. Pour over marinade, turning kebabs to coat throughly. Cover with plastic wrap and allow to marinate for at least 30 minutes.
  4. Heat a grill plate or barbecue grill to hot. Grill kebabs for 2 minutes each side - 8 minutes in total or until done to your liking. (During cooking, brush kebabs with leftover marinade.)
  5. Serve with a salad or vegetables.
