Country Captain Chicken

Ingredients

  • Boneless chicken cut into 1 – 1 ½ inches sizes – 2 kgs
  • Ghee (¼ cup)
  • Finely chopped onions – 4
  • Minced garlic – 1 tsp
  • Finely chopped ginger – 1 tsp
  • Tomatoes chopped – 3
  • Almonds (sliced) – ¼ cup/50-60 grams
  • Raisins - ¼ cup/50-60 grams
  • Water – ½ cup/125 ml
  • Dry spice mix for rubbing the chicken
  • Salt – to taste
  • Black pepper – ¼ tsp
  • Turmeric powder – ½ tsp
  • Cumin powder – ½ tsp
  • Coriander powder – ½ tsp
  • Cardamom powder – ¼ tsp
  • Cinnamon powder – ¼ tsp
  • Kashmiri mirch – 1 tsp

Directions

  1. Rub Chicken with dry spice mix and let it rest for at least 30 mins. More the merrier.
  2. Heat ghee in a heavy bottom pan. Pan fry chicken pieces for 3-4 mins till it turns brown. Remove it from pan and keep it aside in a bowl.
  3. Add onions and saute till it becomes transparent to near brown for about 5 mins.
  4. Add garlic and ginger and saute for 2 mins.
  5. Add tomatoes and chicken and saute for 5-6 mins.
  6. Add sliced almonds, raisins and water and bring it to a boil.
  7. Cover it and cook on low heat for about 20 mins or till the chicken is tender. Adjust water as needed.

Serve:

  1. Serve it with green salads and chapati/parantha/plain rice.
