Country Chicken Soup

Ingredients

  • 1 whole chicken
  • 1 1/4 liter of vegetable stock
  • 4 sliced carrots
  • 2 onions, in halves or quarters if you like
  • 1-2 parsnips (depending of the size), chopped in cubes
  • 1-2 parsley roots (choped in cubes)
  • 1/4 cellery root (chopped in sticks)
  • 2 big potatoes (peeled, halved and sliced)
  • 2 bay leaves
  • A sprig of thyme
  • Some whole black pepper corns
  • Salt to taste
  • A handful of chopped parsley for taste and decoration.

Directions

  1. In an a soup pot put in the whole and rinsed chicken and pour over the vegetable stock.
  2. Bring slowly to boil and then lowering the heat immediately to the stage of simmering.
  3. Skim away all the cloudy stuff coming up to the surface until nothing more appears.
  4. Add all the prepared vegetale pieces an bring to boil again.
  5. Skim again and let it all simmer gently one hour.
