Creamed Spinach

Ingredients

  • 1-2 lbs spinach
  • 2-3 Tbsp butter
  • 2 Tbsp flour
  • 1 garlic clove, minced
  • milk/cream
  • salt and pepper
  • 1 egg

Directions

  1. In a Medium sized pot bring water to boil.
  2. • Wash the spinach and drain.
  3. • Cook just until limp.
  4. • Drain and plunge into cold water.
  5. • Squeeze out all the juices, and chop spinach finely.
  6. • In a pot make a roux from butter and flour.
  7. • Add the garlic.
  8. • Stir the chopped spinach into the roux.
  9. • Add milk to make the sauce thick. Add the egg.
  10. • Cook and stir until bubbles break the surface.
  11. • Slowly simmer for 2 minutes, use immersion blender to make the sauce smooth in consistency.
  12. • Season creamed spinach with salt and pepper.
