Creamy Avocado Soup

Ingredients

  • 1 ripe avocado, peeled and diced
  • 3 cups fresh butter leaf lettuce (or arugula if you like a peppery kick)
  • 2 cups vegetable or chicken broth
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp each minced parsley and cilantro (or your favorite low-oxalate herbs)
  • Seasoned salt, to taste
  • 1 tbsp lemon juice

Directions

  1. Warm olive oil in a pot over medium heat.
  2. Add onion and garlic, cooking until fragrant (about 3 minutes).
  3. Stir in the herbs, then cook 1 more minute.
  4. Add butter leaf or arugula—cook until it’s just wilted.
  5. Pour in broth and simmer gently for 5–7 minutes.
  6. Add avocado and simmer another 2 minutes.
  7. Remove from heat, blend until smooth, and season with seasoned salt and lemon juice.
  8. Serve warm with a dollop of plain yogurt or swirl of kefir for extra creaminess.
