Crock Pot Chicken & Rice Soup

Ingredients

  • 1 cup uncooked rice
  • 1 lb chicken breast
  • 2 cups (celery,carrots,onions)
  • 6 cups chicken broth
  • 1/2 cup butter
  • 3/4 cup flour
  • 2 cups whole milk
  • 2 tablespoons white wine
  • 2 cups additional milk

Directions

  1. Place uncooked rice, raw chicken, celery, carrots, onions, chicken broth in crock pot.
  2. Cook 7-8 hrs. Do not drain liquid.
  3. Remove the chicken from the crock pot and allow to cool slightly. Shred the chicken. Return it to the crock pot.
  4. Melt the butter in a sauce pan. Add the flour and let the mixture bubble for 1 minute.
  5. Slowly whisk in the whole milk until thick. Stir in wine.
  6. Add this to the crock pot and stir to combine. Add extra milk. Season with salt and pepper.
