Crockpot Beef Ramen Noodles!

Ingredients

  • 1 lb ground beef
  • 1 cup matchstick carrots
  • 1 red bell pepper
  • 3 scallions
  • (Or bag of Asian frozen veggies)
  • 14.25 oz chicken stock
  • 3 garlic cloves minced
  • 2 Tbsp packed brown sugar
  • 1/4 cup reduced-sodium soy sauce
  • 2 teaspoons sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon pepper
  • 2 packs ramen noodles
  • Sesame seeds

Directions

  1. 1. Brown beef and drain. Pour into crockpot.
  2. 2. Add carrots, chopped red bell pepper, and scallions OR bag of frozen veggies.
  3. 3. In a medium bowl whisk together garlic, soy sauce, brown sugar, and chicken stock. Pour over slow cooker ingredients. Stir.
  4. 4. Cover and cook on low for 4-6 hours.
  5. 5. 30 min before serving, and dry ramen noodles (not seasoning packets)
  6. 6. Once tender, top with additional scallions, sesame seeds, and then serve!
