1. Brown beef and drain. Pour into crockpot.
2. Add carrots, chopped red bell pepper, and scallions OR bag of frozen veggies.
3. In a medium bowl whisk together garlic, soy sauce, brown sugar, and chicken stock. Pour over slow cooker ingredients. Stir.
4. Cover and cook on low for 4-6 hours.
5. 30 min before serving, and dry ramen noodles (not seasoning packets)
6. Once tender, top with additional scallions, sesame seeds, and then serve!
