Crunch Parmesan Zucchini

Ingredients

  • 4 smaller zucchini
  • 1/2c panko crumbs
  • 1/2 c grated Parmesan cheese
  • 1t garlic powder
  • Pepper & salt
  • 1 or 2 eggs

Directions

  1. Cut zucchinis in half and then each half in 4 lengthwise (32 fingers)
  2. Mix dry ingredients in a bowl
  3. Lightly beat egg/s
  4. Dip fingers of zucchini into egg and then press on the dry ingredients
  5. Refrigerate
  6. Place fingers on a rack over a tray and cook in hot oven, about 200-220° for 20 minutes
