  • 1-8 yukon gold potatoes about 2" in diameter
  • 1/2 cup shredded cheese
  • 3 tablespoons pesto or rotell tomatoes
  • salt and pepper
  • Red onion
  • Butter
  • Optional:
  • Bell pepper, Chili pepper (s), jalapeno

Directions

  1. Cube or slice potatoes. Melt butter or heat olive oil. Cut onions as desired. Place potatoes and onions in oven safe cookware. Also, peppers if desired. Cook until potatoes about done. Cover potatoes with pesto or rotell and cheese. Continue cooking until potatoes are done
