Danish Apple Dessert

Ingredients

  • Caramelized bread crumb:
  • 4 deciliter bread crumb
  • 4 tbsp cane sugar
  • Cooked apples:
  • 4 big cooking apples, preferable Belle de Boskoop
  • 4 tbsp cane sugar
  • 1/4 tsp vanilla pod
  • 1/2 deciliter cold water
  • For decoration and taste:
  • 2 deciliter whipped cream
  • 4 tsp black currant jam

Directions

  1. Peel the apples and remove kernels.
  2. Chop apples into pieces.
  3. In a pot cook apples together with sugar and 1/2 deciliter of water.
  4. Cook slowly until you can easily mash the apple pieces.
  5. Add the vanilla pod
  6. Roast the bread crumb with sugar - constantly stir and toss it over - until the sugar starts melting and begin to caramelize.
  7. Take the pan off the heat and keep on stirring until slightly cooled down.
  8. If the bread crumb stick together - crush it and leave for further cooling.
  9. In 4 dessert bowls spread caramelized bread crumb in the bottom
  10. Add a couple of spoonful mashed apple.
  11. Again a thin layer of bread crumb.
  12. Then a thicker layer of apple.
  13. Decorate with whipped cream an a tsp of back currant jam.
